- Pelaremos y cortaremos las patatas en juliana (algo finas para que se hagan más rápido) y también irán a la sartén junto a la cebolla, damos unas vueltas y lo taparemos
- De vez en cuando iremos removiendo pero dejaremos la sartén tapada para que se hagan más deprisa
- Batiremos en un bol aparte 3 huevos
- Cuando las patatas y la cebolla estén blandas (veréis que se deshacen al remover) las escurriremos in poco y las pasaremos al bol con los huevos, salpimentaremos y removeremos bien para que quede una mezcla homogénea
- El aceite sobrante lo pasamos a un recipiente, pondremos la sartén a fuego medio alto y verteremos la mezcla del bol, tapamos esperamos 2-3 minutos y con ayuda de un plato daremos la vuelta a la tortilla y cocinamos 1-2 minutos por el otro lado, si para gusta muy hecha podéis dejarla más tiempo.
